We all know the feeling; lunchtime, last minute company and nothing of great substance in the fridge, eeek! With 15 minutes to whip up a culinary delight for my guest, I turned to my old faithful Green Soup. Made with a few health boosting, tummy flattening fundamentals that I always have on tap I had no real reason to panic.
Before I tell you how to make this delicious green sludge - it’s really not difficult or time consuming - let’s take a closer look at what’s in it and how you and your bikini body can benefit from its ingredients and their healthy properties.
The base of the soup is spinach, a very nutrient-dense food. Low in calories it has a bounty of vitamins and minerals, often bringing quick and effective relief from dry, itchy skin, lavishing you with a radiant complexion. It’s an outstanding source of antioxidant vitamins C and A, which help to reduce the amount of free radicals in the body. The anti-cancerous properties of spinach won’t be what shrinks your waistline or flattens your beautiful beach worthy midriff, but its low calorie content will. Eat spinach in abundance, you can’t go wrong.
The second most featured ingredient is courgette. With high antioxidant values, they’re super low in calories because of their high water content. They may not pack the nutritional punch of other green vegetables (broccoli, kale etc.) but they do contain significant levels of potassium to control blood pressure and vitamin C to boost your immune system.
I love to add fresh chillies into a lot of the cooking I do, more specifically my Green Soup. Not only do I adore their flavour and added ‘ZAP!’ they bring to a dish, but they also help to increase the body’s metabolic rate through Capsaicin, a thermogenic compound that aids fat burning. Chillies also lower blood sugar levels, boost circulation, reduce inflammation and help clear congestion. So, if you are thinking about revving up your system in preparation for the beach, don’t go easy on the chillies.
Although spinach, courgette and fresh chillies are the main ingredients in the Green Soup, this time I added in a bit of left over pumpkin I had in the fridge. Another great source of antioxidant and anti-inflammatory properties, pumpkins help with joint, organ and soft tissue injuries. Not only that, the high levels of Vitamin C boosts the immune system and encourages collagen production for the skin, say hello to a beautiful glow!
A bowl of green goodness that is easy to make, delicious and guaranteed to flood you with 'beach body’ worthy benefits.
Recipe: *Feel free to create your own variation by adding in veg that takes your fancy to the spinach, courgette and chilli base*
3 large handfuls of washed raw Spinach
2 green courgettes
1 large fresh red chilli
1 red onion
1 clove of garlic
Directions: Chop veg into chunks and place everything at once into a wok on a low heat with a spritz of low fat oil. Stir until the veg starts to soften. Add in boiling water (just enough to almost cover the contents) and simmer for 5 minutes. Pour into a blender and blitz until smooth. Add salt and pepper.
To serve: Pop a dollop of low fat natural greek yoghurt in the middle et voila!
